National Cheese Day!

 National Cheese Day seems like the perfect time to share this cheesey recipe. It's one of the first recipes that my daughter Sara made by herself. Maybe that's why my family refers to it as 

Sara's Cheeseburger Pie!


Sara's Cheeseburger Pie

1 pound hamburger                                        1/4 teaspoon pepper

1/2 cup minced onion, optional                        3 eggs

3/4 cup Bisquick                                            1/2 teaspoon salt

2 tomatoes, sliced                                          1 cup milk 

1 cup shredded cheddar cheese


Brown hamburger and onion, drain. Beat eggs, Bisquick, salt and pepper. Put browned hamburger and onions in 10" pie pan. Pour liquid mixture over this and bake at 400 degrees for 25 minutes. Take from oven. Top with tomatoes and cheese. Return to oven and bake until knife inserted in center comes out clean (5-8 minutes). Serves 6-8.

B is for Burgers


No, this is not our family portrait. Our daughter Sara loves to try new recipes and has become quite the cookbook collector. I think it's hereditary because my mom was a HUGE collector of cookbooks also. One of Sara's favorite TV shows is Bob's Burgers, so when son Michael saw this cookbook, he knew it would be a perfect Christmas gift for his sister!


The show is pretty silly, and the names of the burger recipes are even sillier, but man, do they ever taste good! Here's one of our favorites...made with butter and cheese, of course. Hope you enjoy it too.

Poutine On The Ritz
3 tablespoons black pepper, divided
2 tablespoons paprika
2 teaspoons cayenne pepper
French fries or Tator tots
4 tablespoons butter
4 tablespoons flour
3 cups beef stock
1 pound ground beef
salt
4 buns
fresh cheese curds
1 sleeve Ritz crackers

Combine 2 tablespoons of the pepper with the paprika and cayenne in a large bowl. Cook the Fries (or Tots) and then toss with the pepper mixture and a pinch of salt while still warm. 
To make the gravy, melt the butter in a saucepan over medium heat and whisk in the flour. Keep whisking until the mix starts to turn a light brown. Add in 2 cups of the beef stock and stir until completely combined. Stir in remaining 1 tablespoon of the pepper, and then slowly add the remaining stock.
Make 4 patties, season both sides with salt and pepper, and cook.
Build your burger- bottom bun, a bunch of cheese curds, brown gravy, a gratuitous amount of crumbled Ritz crackers, top bun.
For the potatoes- mix in cheese curds with Fries (or Tots) and pour gravy on top.


Dinner is served!
It's simple, but a bit classier than a plain burger,
and the Tots...Oh my gosh!

BBQ Chicken and Cheddar Foil Packet Dinner

One of my favorite meals growing up was "Hobo Dinner". It was a ground beef patty, sliced potatoes, and sliced carrots neatly wrapped in a foil package, and popped in the oven or on the grill. Perhaps it was a favorite because it was one of the first things I learned to make. Or perhaps it was a favorite because there were no dishes to wash since it was cooked in aluminum foil and eaten from that same foil packet. 

Imagine my excitement when Sara found this recipe on the Midwest Dairy website. It brought back fond memories of delicious food and no dishes to wash!

Mac and Cheese, Please


I admit that macaroni and cheese typically comes from a blue box when served at our house. Quite some time ago I saved a recipe that I wanted to try, from a magazine (a hobby I inherited from my mom). I always have good intentions to cook up every recipe I save, but the delicious sounding dishes don't always make it to the table- but this one did. Victory! Give it a try, and let me know what you think. Is it thumbs up, or thumbs down? Is it worth the effort, or back to the blue box?

Tiffany's Mac and Cheese With Bacon
Recipe from HGTV magazine

8 strips bacon
8 ounces elbow macaroni
4 tablespoons unsalted butter, cut into pieces
1 12-ounce can evaporated milk 
8 ounces grated sharp cheddar cheese
8 ounces grated monterey jack cheese
1/4 cup parmesan cheese
ground white pepper (optional)


  • Cook the bacon in a large skillet over medium heat, turning occasionally, until crisp and browned, about 8 minutes. Drain on paper towel until cool, then crumble.
  • Meanwhile, bring a medium pot of water to a boil. Add the pasta and cook as directed on the label. Reserve 1/2 cup cooking water, then drain the pasta and return it to the pot. Add the butter to the cooked pasta and stir to melt.
  • Heat the evaporated milk in a large saucepan over medium heat, stirring occasionally, until just simmering. Reduce the heat to low and stir in the cheddar and monterey cheeses until melted. Remove the pan from the heat, then add the reserved cooking water. Season with the white pepper to taste. Add the cooked pasta to the cheese sauce, and stir to coat.
  • Position a rack in the upper third of the oven, and turn on the broiler. Sprinkle the bacon and parmesan cheese on top. Broil; until the top is golden and bubbly, about 2 minutes.
Ready for the oven.

Calzone Pinwheels

I'm sure this comes as no surprise, but I love cheese! I have pretty good radar when it comes to finding recipes that include cheese, and lots of it! When our friend Ana made these Calzone Pinwheels as a snack for my family, I knew I needed to share the recipe with you. 

This batch stayed in the oven a bit too long, but I'm still shocked I got a photo before they were gobbled up!

Calzone Pinwheels

Ingredients
1/2 cup shredded part-skim mozzarella cheese
1/2 cup part-skim ricotta cheese
1/2 cup diced pepperoni
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh mushrooms
1/4 cup chopped green pepper
2 tablespoons finely chopped onion
1 teaspoon Italian seasoning
1/4 teaspoon salt
1 package (8 ounces) refrigerated crescent rolls
1 jar (14 ounces) pizza sauce, warmed

Directions
1. Preheat oven to 375 degrees. In a small bowl, mix the first nine ingredients.
2. Unroll crescent dough and separate into four rectangles; press perforations to seal. Spread rectangles with cheese mixture within 1/4 inch of edges. Roll jelly-roll style, starting with a short side; pinch seam to seal.
3. Using a serrated knife, cut each roll into four slices; place on a greased baking sheet, cut side down. Bake 12-15 minutes or until golden brown. Serve with pizza sauce. Makes 16 appetizers.

N Is for Nibbles, Nuggets, and News

Welcome back for today's entry for June Dairy Month. Today we salute letter N.
Earlier this week I joined up with Princess Kay of the Milky Way, Kyla Mauk to visit with shoppers at Hy-Vee in Oakdale, MN.


We were invited by Hy-Vee Registered Dietician, Jena Pape to speak with shoppers about the importance of having three servings of dairy each day, and what better way to reach out to these consumers than to offer a nibble of cheese. The Chipotle flavored cheese was a big hit, even for those of us who aren't spicy food eaters.


We also invited shoppers to go to the Midwest Dairy website to pledge to have their Dairy 3 For Me servings each day, and also to view even more recipes than the ones in the recipe books we handed out.


Kyla answered several questions about being Princess Kay (who doesn't like meeting a princess?) and Kyla and I both answered lots of questions about dairy foods and dairy farming. We both agree we love speaking right to the people that buy, consume, and enjoy the foods we produce. Thank you to the shoppers at Hy-Vee Oakdale that came to us, the people behind the product, to get their questions answered right from a farmer!

Dairy Every Day



I am so pleased to introduce you to April Graff, my guest blogger. She is not only really smart when it comes to good food choices, but she is a fun person that I met at a conference in Kansas City, and again in Chicago. Today she shares the benefits and tips of including dairy in your diet.
 
Top 5 Ways to Add Dairy to Your Day

As a supermarket dietitian, I often get asked about the role of dairy in health. What benefits does dairy provide and how to pick the best products. Here’s my top 5 ways to add dairy to your day. 




  1. Yogurt. Sales of yogurt have sky-rocketed the past several years, mostly in Greek yogurt sales. Benefits: Calcium for strong bones and teeth, b-vitamins for energy, and protein (6-14 grams/serving) to keep you fuller longer. Greek yogurts will be higher in protein, but traditional yogurt still has about 6 grams per serving. 
Tip: Check the label for added sugars. Plain, unflavored varieties are best (add your own fruit), or look for those with the lowest sugar content (aim for 9-15 grams of sugar, the lower the better). *Note: yogurt naturally contains some sugar (lactose); it is the added sugars we want to minimize.


  2. Kefir. Often thought of as drinkable yogurt, this flavorful drink is a perfect addition to smoothies or cereal. Benefits: Kefir is a great source of probiotics (good bacteria) to help keep your gut healthy. Many kefir products contain 12 grams protein/serving for fullness.

Tip: Just like yogurt, kefir can have added sugars. Choose a product with lower sugar (or opt for plain). 



 3. Milk.Classic milk may not have the flair or marketing that other products have, but this powerhouse is packed with nutrition for just pennies per serving! Benefits: One serving (8 oz) has 8 grams of protein, 9 essential vitamins and minerals, and packs a hydrating punch.

Tip: For those with lactose intolerance, try a lactose-free milk for all the nutrition without the complications. 


  4. Cheese. Many people’s favorite dairy product, cheese often gets a bad rap. Benefits: Protein, fat (yes, fat is a benefit when eaten in moderation), and flavor make this #dairygood food a great choice. 
Tip:  The key to including cheese into a healthy diet is portion size. One ounce of cheese (think a piece of string cheese or a small handful of shredded) can be enough to take any meal and make it amazing (pasta, salads and eggs). 


  5. Ice Cream. Perhaps the most indulgent of dairy products, ice cream can fit into a balanced lifestyle. Benefits: Surprisingly, calcium, potassium, and phosphorus are in that decadent bowl of creamy goodness. 
Tip: Portion size is important. One serving of ice cream is just ½ cup, which can look lonely in a big bowl. Instead, opt for a coffee mug as a portion-appropriate dish. Plus, including a “treat” is all a part of a healthy lifestyle. So eat responsibly!

  C Is For Cheese
 This is my third year of doing my A to Z for June Dairy Month and I have never done C Is For Cheese. Shame on me! It's time to correct that. After all, our refrigerator is never without cheese! If it was, how could Daughter Sara grab string cheese to nibble on her way to the barn to help with the evening milking?
What is your favorite cheese? Mine is sharp cheddar!

A Day Late

I have a potato recipe I want to share with you. I served Roadside Potatoes 
 yesterday as part of our Easter feast with my family.

 (Hey Jan, why didn't you post this before Easter so we could have served them too?)
 
I rarely publish a recipe on my blog that I haven't tried first. Come to think of it, I have only posted one recipe that I didn't make. The weird thing is...I served my Easter guests these potatoes without trying the recipe...but yet I won't share it with my readers without trying it. Hmmm...

Roadside Potatoes
24 ounces frozen hash browns
1 pint whipping cream
1 cup butter, melted
1 teaspoon salt
1 cup shredded Parmesan cheese

Place hash browns in a 9x13 pan. Cover with Parmesan cheese. Melt butter and stir in whipping cream and salt. Pour mixture over cheese and hash browns. Bake at 350 degrees for 1 hour or until golden brown on top.

Everything's better with cheese!

* I also made a pan using cheddar cheese. Yummy!
** This basic recipe would be great with some additions- I'm going to try onions, or bacon bits, or green peppers, or ham pieces. The possibilities are endless! What would you add?

And The Winner Is...

Who's excited for the Oscars? 

I am an avid movie watcher, and the Oscars is my time to see if I agree with the critics. I confess I am more of an at-home movie watcher, so yes, I admit there are many nominated pictures that I haven't seen ...yet. The Oscars help me decide which movies are worthy of my theater dollars, and my time. But there is so much more to the Academy Awards than the "awards." I get wrapped up in the clothes, and hair-styles, and  the who-is-with-whom. I enjoy the movie clips, the best song nominations, and the awkwardly polite camera shots of nominated actors when their category is announced and they didn't win!

Speaking of winners (great segue, huh?) I love this new hot dip recipe; a perfect treat for "the movie industries biggest night of the year" and only three ingredients!
Any Swiss cheese can be used, however the recipe calls for Jarlsberg for its sweet and nutty taste.
 Oscar-Worthy Cheese Dip

2 cups Jarlsberg cheese, grated
2 cups mayonnaise
2 cups grated onions

1. Mix altogether and place in a rectangular glass baking dish.
2. Bake at 350 degrees for 20 minutes.
3. Serve with crackers.
4. This recipe is even better when made a day ahead, refrigerated, and re-heated in the microwave or oven.

Best actor in a leading role goes to...Cheese!

Ole' Let's Celebrate!

It's National Tortilla Chip Day!
Let's Celebrate!


February 24th is a day set aside to honor this delicious snack food made from corn tortillas. Tortilla chips are a favorite snack at our house. Eaten alone, they are great... eaten with cheese, they are even better! Whether we dunk them in homemade salsa, drench them in melted cheese, or enjoy them with this Hot Corn Dip; it's hard to say no to this snack.

Hot Corn Dip
 
Ingredients:
2 tablespoons unsalted butter
3 1/2 cups corn kernels
1/2 teaspoon salt
1/8 teaspoon fresh ground black pepper
1 cup finely chopped yellow onion
1/2 cup finely chopped red bell pepper
1/4 cup chopped green onion (green and white parts)
1 jalapeno, seeded and minced (if desired)
2 teaspoons minced garlic
1/2-1 cup mayonnaise
4 ounces monterey jack cheese or 4 ounces cheddar cheese, shredded
4 ounces sharp cheddar cheese, shredded
1/4 teaspoon cayenne
tortilla chips, for dipping

Directions:
1. Preheat the oven to 350° degrees F.
2. Melt 1 tablespoon of the butter in a large heavy skillet over medium-high heat.
3. Add the corn, salt, and pepper.
4. Cook, stirring occasionally, until the kernels turn deep golden brown, about  5 minutes.
5. Transfer to a bowl.
6. Melt the remaining tablespoon of butter in the skillet.
7. Add the onions and bell peppers and cook, stirring often, until the onions are wilted, about 2 minutes.
8. Add the green onions, jalapeno, and garlic and cook, stirring, for 2 minutes, or until the vegetables are softened.
9. Transfer to the bowl with the corn.
10. Add the mayonnaise, 1/2 of the monterey jack and half of the cheddar, and the cayenne and mix well.
11. Pour into an 8-inch square baking dish and sprinkle the remaining cheese on top.
12. Bake until bubbly and golden brown, 10 to 12 minutes.
13. Serve hot with the chips.
14. NOTE: This recipe does NOT reheat well after freezing.
